Chicken Soup. Portuguese Canja.

This soup is great and super delicious, is perfect for any occasion, but is used for decades to help people feel better when feeling sick, or hungover. Is used in Portugal, Cape Verde, and Brasil

Is a perfect combination of chicken with rice, or some use tiny pasta in form of letters and the soup is full of proteins. I used to eat this chicken soup ( Canja de galinha.), with chicken feet, but in those days can be difficult to find, the used chicken wings or legs if you prefer.

No worries if you do it a little bit extra because you can freeze and use it as you please.


Chicken Soup ( Canja de galinha) Recipe:



Preparation time: 20 minutes

Cooking Time: 30 minutes

Ready In: 50 minutes

Level of Difficulty: Easy

Servings: 6


Ingredients:


200 g of Basmati Rice

400 g of Chicken ( feet, legs, or wings)

1 medium onion ( cut into tiny pieces)


2 Garlic cloves

4 medium carrots ( cut them in circles)

1 Medium Tomato

Salt q.b

100 g Parsley fresh and powder

Olive oil 4 tablespoons

75 dl of Boiling Water



Preparation:


1-In a large pan, put the 400g of chicken after washing in cold water, add the salt, onion, garlic, and olive oil, mixt well put the tomato sliced in cubes on top,d let it cook in medium heat for 20 minutes.


2- When the chicken is well cooked, put the carrot on top, and mix it all well.

Add the parley and boiled water, cover, and wait till the water starts boiling.


3- And the water is boiling pour the rice inside, mix all checking the salt, and if necessary add more salt. Spread some parley on top.

Cover and let it cook for 15 minutes, turn off the heat, and is ready to serve.
